Veggie Pinwheels

                           Ingredients:
1 Cup chopped broccoli
1 Cup chopped carrots
1 Cup chopped cauliflower
1 Cup diced cucumber
½ Cup chopped olives
8oz fat free cream cheese
1 packet powdered ranch dressing
Tomato or Spinach tortillas

Directions:

Mix the cream cheese and the powdered ranch dressing together in a bowl. Add the finely chopped vegetables and mix well.   Place the mixture in the refrigerator for 30-60 minutes.   Once the mixture is chilled, spread it onto your tortilla shells.   Roll each tortilla shell up to make a long tube-like shape. Finally, slice the rolled up shells into 1 inch pieces and serve.
