Palmetto Trail Mix

Makes 26 one cup servings
This recipe originated at a New England Inn
 
2 cups honeytrailmix
1 cup sunflower kernals
1 ¾ cup vegetable oil
1 cup untoasted wheat germ
1 (42oz.) pkg. quick-cooking oats
1 cup shredded coconut
2 cups nonfat dry mix powder
1 cup raisins
2 cups sliced almonds
1 cup cranberries
 
Combine honey and oil in a microwave-safe dish and microwave for 7 minutes
Mix the oats, milk powder, almonds, sunflower kernels, wheat germ, coconut, raisins, and cranberries in a large roasting pan (or turkey roaster)
Add honey/oil mixture and mix well.
Bake at 300° for 45 minutes, stirring every 15 minutes
 
Let stand until cool
 
Store in airtight container/bags in the refrigerator .  (May store in the freezer for future use)
 
 

 
Notes from the Trail

Its only early July, but we have definitely been in the dog days of a SC summer.  Trail work has been slow but steady.  I have spent several days on the Fort Jackson Passage, removing the fallen trees and invasive undergrowth.  It is a very surreal hike with the gunfire from the US Military practicing as background noise.  I plan to continue work on this passage to ensure that it is in good shape. 

One of the best ways to beat the heat this summer is to enjoy the many lakes and rivers SC has to offer.  We took a paddle out into "The Pasture" on Lake Moultrie in June.  Paddling though the thick cypress trees beside the osprey nests while the grass carp swim underneath was like being in a foreign world.  The lake was so thick with lily pads and flowers that it looked like carpet across the water.
